Angel's Envy Selection Private Single Barrel

The regular Angel's Envy has been one of my of my favorite Bourbons for more than 10 years. In the early summer I got to try a samples from three barrels and selected Barrel #3087 to start our Single Barrel and Special Selection program.

I selected that particular barrel for the robust and fruity, yet not sweet character of the whiskey.

The color is much darker than the regular bottling. The whiskey starts a hint hot with notes of pepper and spice from the rye. This is followed by hints of cinnamon, tart cherry, dark chocolate and fruit cake. There are also undertones of brazil nuts, malt, vanilla and caramel. The very long finish has flavors of nut cake, vanilla, hints of oak and caramel that just linger.

A drop of water (I literally just added one drop of water in a tasting glass) brought out more of the fruity flavors together with more caramel and milk chocolate. And the finish had more flavors and notes of nuts such as pecans, walnuts, hazelnuts and a hint of chocolate.

We selected this barrel for its extra aging in Port and Sherry casks. It is more full bodied that the regular bottling. The Port and Sherry

imbue the whisky with more flavors of malt, chocolate, hints of raisins and baked apples. The finish has notes of holiday cake, hazelnuts, caramel.
