When was the last time you had an real, organic Tuscan wine? If you haven't, then I highly recommend that you try one of the forerunners in organic farming in Tuscany: Pacina! Pacina is located in the DOCG of Chianti Colli Senesi on the southern side of Castelnuovo Berardenga where husband and wife team, Stefano and Giovanna, cultivate and produce Sangiovese in harmony with their terroir, without technology, 100% organically, just as the estate has been since it was a monastery in 900 AD. Berardenga sounds familiar...ever heard of Felsina? Well, Pacina are their neighbors across the street! Their flagship wine, the Pacina Toscana is a hidden gem of Colli Senesi that everyone should experience. It consists of 95% Sangiovese and 5% Canaiolo fermented in concrete tanks with natural yeasts. The wine is then aged in small and large oak barrels for 14 months, and then another 12 months in the bottle before release. The palette is full with notes of cherry, plum, flowers, leather, sweet tobacco, and subtle spices. Pairs extremely well with red meats and mushroom risotto!"

This is classic Marlborough Sauvignon, with all of the flashy aromatics one would expect, but no over-the-top pungency. Similarly, on the palate, there’s exciting grapefruit and lime fruit and lots of zesty acidity, but no sourness and no overtly sugary sweetness. Very well crafted in a manner that was respectful of perfectly ripened fruit. A Double Gold award winner at the 2017 Toast of the Coast Wine Competition.”
